On Dashashwamedh Road at Godowlia, a few minutes from the main ghat, Kashi Chat Bhandar is the name most people give when asked where to eat chaat in Varanasi. The shop has been making it for decades and keeps more than a dozen kinds on the go.
Order the tamatar chaat — tomatoes cooked down with spices and topped with crisp namak pare — and the aloo tikki. Palak patta chaat, golgappe and dahi bade are the other favourites. It is entirely vegetarian, busy from late afternoon, and best eaten standing at the counter like everyone else.
